Description

Ingredients

8 prawns
1 tablespoon vegetable oil
1 leeks
1/2 shallots
150 grams short-grain rice
400 milliliters fish stock
2 bags squid

Directions

1Add the oil to a skillet on medium heat. Add the prawn shells and saute for a few minute. Strain the oil and return to the skillet.
2Add the leek and shallot to the skillet and saute for about 3 minutes. Incorporate the rice and saute for 2 minutes
3Add the fish stock and bring to a boil.
4Add the squid ink and simmer for 18 minutes.
5With 3 minute to go, remove from the heat and add the shrimp. Allow the rice to rest 5 minutes before serving.
