Description

If you have a bread machine, you'll want to use it make this version of foccacia, the favorite Italian flatbread with a pleasant spongy texture that's all about the air pockets that form during baking. Here the basic dough is simply seasoned with coarsely crushed whole black peppercorns, making it an ideal partner for all types of cheese and cured meats—basically anything you would assemble on an antipasto platter.

Ingredients

310 milliliters water
1 tablespoon olive oil
12 grams salt
10 grams sugar
300 grams durum wheat flour
180 grams flour
12 grams yeast (brewer’s)
15 black peppercorns (coarsely crushed)
5 tablespoons extra-virgin olive oil
4 tablespoons warm water
salt

Directions

1Place the water, oil, salt, sugar, durum wheat flour, ‘0’ flour, yeast, and peppercorns in the bread machine and set it to the kneading function. Leave the dough in the machine for an additional 30 minutes.
2Roll out the dough, place it in a greased baking sheet, and let it rest for another 60 minutes.
3Preheat the oven to 220C.
4Press your fingers into the dough making many indentations then, combine the oil with the water and the salt and brush the mixture all over the dough.
5Bake for approximately 18 to 20 minutes.
6Remove the bread from the oven and serve.
