Description
If you have a bread machine, you'll want to use it make this version of foccacia, the favorite Italian flatbread with a pleasant spongy texture that's all about the air pockets that form during baking. Here the basic dough is simply seasoned with coarsely crushed whole black peppercorns, making it an ideal partner for all types of cheese and cured meats—basically anything you would assemble on an antipasto platter.

- 1 Tbsp. olive oil
- 12 grams salt
- 10 grams sugar
- 300 grams durum wheat flour
- 180 grams flour
- 12 grams yeast (brewer’s)
- 15 black peppercorns (coarsely crushed)
- 5 Tbsp. extra-virgin olive oil
- 4 Tbsp. warm water

Directions
- Place the water, oil, salt, sugar, durum wheat flour, ‘0’ flour, yeast, and peppercorns in the bread machine and set it to the kneading function. Leave the dough in the machine for an additional 30 minutes.
- Roll out the dough, place it in a greased baking sheet, and let it rest for another 60 minutes.
- Preheat the oven to 220C.
