Ingredients

  • 2 tablespoons oil (butter, regular or ghee)
  • 1 onions (medium, finely chopped)
  • 1/2 teaspoon cumin seed
  • 1 inch ginger (piece of, finely chopped)
  • 2 garlic cloves (finely chopped)
  • 1 teaspoon ground coriander
  • 1/4 teaspoon ground turmeric
  • 1/2 teaspoon garam masala (optional but traditional)
  • chile powder (Ground, to taste, I started with a 1/2 teaspoon, but I have to keep things weak for kids)
  • 1 cup tomatoes (finely chopped or pureed, fresh or from a can)
  • 1 teaspoon fine sea salt (plus more to taste)
  • 1 cup black lentil (dried)
  • 4 1/2 cups water (plus more to taste)
  • 4 teaspoons butter (salted is lovely here)
  • 2 tablespoons heavy cream
  • 1 handful chopped fresh cilantro
