This isn't your traditional quesadilla! It's loaded with fiber and fermented goodness. Don't be shy because the flavors profiles fit perfectly together.

  • 4 corn (organic, torillas)
  • 1 can black beans (rinsed & drained)
  • 2 tablespoons chopped cilantro (freshly)
  • 1/2 lime juiced
  • 1 sweet potato (medium, thinly sliced)
  • 1/2 cup sauerkraut
  • 1/4 cup shredded cheese
  • 1 teaspoon grass-fed butter (or coconut oil, for the pan)

    Directions

    1. Preheat over to 350 F. Thinly slice the sweet potato with a sharp knife or a mandoline. Bake for 10 minutes.
    2. In a medium bowl, combine black beans, cilantro, and fresh lime juice. Mix well with clean hands.
    3. On one tortilla, spread 1/2 of the black bean mixture.
    4. Top with sliced sweet potatoes, sauerkraut, and shredded cheese. Place the other tortilla on top. Repeat the same process with the second set of tortillas.
    5. Heat a large frying pan over medium heat. With coconut oil or butter, brown each side of the tortilla. Be careful when flipping sides, making sure the contents don't fall out.
