Ingredients include boiled black beans, large eggs, sugar, maple syrup or honey, cocoa powder, 70-percent cocoa dark chocolate, instant coffee, scraped vanilla beans, baking powder, and salt. Ingredients

  • 250 grams black beans (boiled)
  • 3 large eggs
  • 100 grams sugar
  • 50 grams maple syrup (or honey, optional)
  • 3 tablespoons cocoa powder
  • 80 grams dark chocolate (70% cocoa, chopped)
  • 1 teaspoon instant coffee
  • 1/2 vanilla bean (scraped)
  • 1 teaspoon baking powder
  • 1 pinch salt

Directions

  1. Preheat oven to 180C.
  2. Put all ingredients, except chocolate, into the blender.
  3. Blend at speed 5 for 20 seconds, or until you get a smooth cream (the mass stays liquid but is normal).
  4. Pour batter into a rectangular pan, greased and dusted with cocoa powder, and lay the pieces of chopped chocolate on top.
  5. Put the cake in the oven for 35-40 min, or until a toothpick inserted in the center comes out clean.
  6. Let it cool completely before unmolding.
  7. Decorate it as you like.

Finally a healthy cake recipe that tastes incredibly. I used folgers instant coffee since it was what was around the house, the taste had both bitter and sweet chocolate touches with the hint of powdered sugar. An absolute 5 star cake I will bake again.
