Ingredients

  • 250 grams black beans (boiled)
  • 3 large eggs
  • 100 grams sugar
  • 50 grams maple syrup (or honey, optional)
  • 3 tablespoons cocoa powder
  • 80 grams dark chocolate (70% cocoa, chopped)
  • 1 teaspoon instant coffee
  • 1/2 vanilla beans (scraped)
  • 1 teaspoon baking powder
  • 1 pinch salt

Directions

  1. 1Preheat oven to 180C.
  2. 2Put all ingredients, except chocolate, into the blender.
  3. 3Blend at speed 5 for 20 seconds, or until you get a smooth cream (the mass stays liquid but is normal).
  4. 4Pour batter into a rectangular pan, greased and dusted with cocoa powder, and lay the pieces of chopped chocolate on top.
  5. 5Put the cake in the oven for 35-40 min, or until a toothpick inserted in the center comes out clean.
  6. 6Let it cool completely before unmolding.
  7. 7Decorate it as you like.
