  • 1 pound brazil nuts
  • 3 ounces pitted dates
  • 7 ounces glace cherries (mixed red and green)
  • 1 cup flour
  • 2 tablespoons sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 eggs
  • 1 teaspoon vanilla extract

Directions

  1. Preheat the oven to 300°F. Grease a parchment paper lined 8 x 4 inch loaf pan.
  2. Mix nuts, dates and cherries in a large bowl. Sift flour, sugar, baking powder and salt over fruit mixture. Mix well.
  3. Beat eggs and vanilla until frothy. Add to batter, stirring well. Spoon into prepared pan.
  4. Bake 1 hour 45 mins until a skewer inserted into center comes out clean. Cool in pan 5 minutes. Remove from pan; cool completely on a wire rack.
