Ingredients

  • 1 egg
  • 120 grams sugar
  • 1 lemon zest
  • 125 grams butter
  • 250 grams flour
  • salt
  • quince jelly

Directions

  1. Beat the egg, sugar, and lemon zest.
  2. Gradually, add butter, flour, and a pinch of salt, until you get a moldable, but not sticky dough.
  3. Form a dough ball, cover entirely with plastic wrap, and refrigerate for at least 1 hour.
  4. Preheat oven to 180 degrees Celsius.
  5. Roll out the dough, and cut into desired shape.
  6. Put some quince jelly in the middle, and bake for 12 minutes.

These are such an easy and tasty treat. They are perfect for an afterschool snack or coffee break. You can use whatever jelly you have and like, although it would be worth it to seek out quince jelly because it is such a unique flavor.
