Biscuits without the need for jams or spreads! These handy biscuits come loaded with the sweet flavor of apricots and the creamy smoothness of cheese. They are easy to make, although they do take some time. They make a perfect companion for soups and salads. As an extra touch, drizzle with butter before baking. Glaze with apricot puree to give them a nice shine. Great for when you want to add some pizzazz to any meal.

Ingredients

  • 15 grams fresh yeast
  • milk (15 cl. warm)
  • 250 grams flour
  • 20 grams sugar (castor)
  • 5 grams salt
  • 40 grams softened butter
  • 20 dried apricots
  • 100 grams roquefort (Papillon, blue cheese)

Directions

  1. In the food processor bowl, dilute the baking powder with the milk. Then add flour, sugar, salt, and butter.
  2. Knead for 7 to 8 minutes to obtain a homogeneous mixture. Let rise for 40 minutes, away from drafts.
  3. Open the dried apricots, and fill them in with roquefort.
  4. Make 20 small balls of dough, flatten with your hand, place a Roquefort filled apricot in the center and cover with dough.
  5. Form dough balls, and place them upside down on a baking lined with paper.
  6. Let rise for 30 minutes.
  7. Brush with egg yolk diluted with a little bit of milk for a shiny glaze.
  8. Bake for 15 minutes.
  9. Serve lukewarm to avoid burning yourself with the hot Roquefort.
