    Directions

    1. Heat large pan on medium-low with oil. Meanwhile, crack eggs into a bowl or pour glass container. Season the eggs.
    2. When the oil starts to shimmer, bring the heat up to medium and melt the butter in the pan.
    3. As soon as the butter completely melts, gently pour the eggs into the pan and cover.
    4. Cook on heat for about 1 minute. Remove the eggs from the heat and let it continue to cook with the lid still on for an additional 1-5 minutes depending on how stiff you want your yolks.
