Wow! My husband absolutely loved this recipe. He gave it a 10 out of 10. The recipe was very easy to follow and didn’t have too many steps. My husband really loves hearty soups, especially with meat. I added 1 lb. of ground turkey and sautéed that with the carrots and onions in the very beginning. I also added 3 cups of kale instead of 1. Perfection!

This came out super delicious. The curry gave it a great taste and something different than usual for me. Don’t worry the curry is not overwhelming, use exactly as the recipe calls for! I made a side of coconut rice to eat with the soup. Definitely making this again.❤️🧡💛 I used cilantro to top it off!

Easy, healthy and good! It’s just what you want on a cold snowy day! My four year old and 13 year old gobbled it up! It pairs well with a salad and fresh bread!

This recipe is sooo good ! Like another reviewer, I substituted more curry powder and less cumin . I also only used 1/2 can of tomatoes . Instead of diced tomatoes , I used fire roasted tomatoes with chilies and skipped the blender portion as the consistency was thick enough !

Delicious and filling! Substituted green onion for white onion, chicken broth for vegetable broth, and spinach for collard greens since that was what I had on hand. Ate it with naan bread. So good!

Very yummy! I used red kale instead of collard greens; added some cabbage and no egg noodles with a little extra veggie broth and it came out great! Needed to add extra sea salt and pepper to taste. Also I didn’t blend part of the soup because I like it to be more soupy and less chili like. Used extra curry powder and less cumin. Tastes a bit like minestrone. Paired with easy 1 hour bread recipe I found on Pinterest. 👍👍 Overall, this recipe is awesome because you can tweek it and it still comes out good!

Lentil recipes can be real lame but this one’s got great flavor. I modified based on what I had in stock, using red lentils, tomato sauce + diced tomatoes in lieu of 28oz of tomatoes, and doubled the greens. Turned out delicious, perfect for fall and winter.

Love this soup! Great flavor and texture. I made a double batch and used home canned stewed tomatoes. Next time I’ll add about one cup less water, just because my tomatoes are more watery.

I had to substitute lemon with lime because I didn’t have one. The outcome was amazing however. It gets more taste as it sits also. Deff will cook this more with colder months upcoming!

I’ve made this several times and everybody loves it! Sometimes I use coconut oil instead of Olive.. I’ve also used chicken broth and/or chicken sausage or pancetta. You can tweek the recipe several ways & it still comes out Delicious ❣️
