Description

This traditional Tuscan cake is heady with a classic blend of ground spices: cinnamon, cloves, coriander, and nutmeg. Anise seeds add even more frangrance and regional flavor, along with finely grated lemon zest and extra-virgin olive oil. The batter is baked here in a Bundt pan, but you could use a tube (angel food) pan or a springform pan, as desired. Serve with tea or espresso, as an afternoon snack or a casual dessert.

Ingredients

  • 400 grams flour
  • 250 grams sugar
  • grated lemon peel
  • 1 tablespoon anise seed
  • spices (Tuscan, powdered, cinnamon, coriander, nutmeg, cloves)
  • salt
  • 2 teaspoons baking powder
  • 4 eggs
  • 1/2 cup milk (warm)
  • 1/2 cup extra-virgin olive oil

Directions

  1. 1Preheat the oven to 170C.
  2. 2Beat the eggs with the sugar until light and foamy.
  3. 3Add the oil, the grated peel of 1 lemon, and the powdered spices.
  4. 4Sift the flour with the baking powder and a pinch of salt. Add to the egg mixture alternating with the milk. The batter should be smooth and creamy.
  5. 5Butter and flour a bundt pan and add the batter.
  6. 6Bake for approximately 45 minutes or until the cake is done.
  7. 7Sprinkle with powdered sugar and serve.
