Ingredients

2 1/4 teaspoons yeast
3 cups milk (warm)
3 egg whites
3 egg yolks
180 grams butter (melted at room temperature)
1/2 cup sugar
1 1/2 teaspoons salt
2 teaspoons vanilla
4 cups white flour

Directions

1Mix the yeast with 1/4 cup warm milk in a large bowl. Let it sit for 5 minutes.
2Mix the egg whites, 1/4 cup warm milk, and butter in a different bowl. Add the yeast mixture.
3Add the sugar, salt, vanilla, flour, and the rest of the milk while stirring, until the mixture has a soft texture.
4Cover the bowl with plastic film and let it sit in a warm place until it size doubles. This should take about 1 to 2 hours.
5Remove the plastic film and stir the dough for 1 minute to remove the air.
6Pour the mixture in a waffle iron and cook until brown on both sides.
7Once ready, store the waffles in the oven at 100C so they keep warm until you finish cooking all of them.
8Serve warm with peanut butter, chocolate, or honey on top.
