Description

Adapted from a traditional Portuguese recipe, this Beira rotten cake is all but rotten in the usual sense of the word. Flavored with orange zest and cinnamon, this cake is made with purely brown sugar for a rich caramel flavor.

Ingredients

  • 2 eggs
  • salt
  • 250 grams brown sugar
  • 2 teaspoons lard (at room temperature)
  • 1 orange zest
  • 150 grams flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 2 deciliters milk

Directions

  1. 1Preheat oven to 180 degrees Celsius.
  2. 2Grease a cake pan with lard, and set aside.
  3. 3In a bowl, mix the flour with baking powder and cinnamon. Set aside.
  4. 4In another bowl, beat the eggs well with a pinch of salt.
  5. 5Add the sugar, and mix again, thoroughly.
  6. 6Add 1 tablespoon of lard and orange zest, and whisk again to a fluffy and uniform cream.
  7. 7Add the flour mixture, alternating with the milk.
  8. 8Stir with a spoon, but without beating. When well mixed, put the dough in the mold, and bake for 35 minutes.
  9. 9Check for doneness with a toothpick , remove the cake from the oven, and unmold when warm.
  10. 10This waiting time will allow the cake to get cheese-like on the inside, something typical of rotten cakes.
