Ingredients

  • 1 beets (medium size)
  • 1 pickled herring fillets
  • 1 apples (Pink Lady)
  • 3 tablespoons olive oil
  • 1 teaspoon balsamic vinegar
  • 1 teaspoon mustard (traditional)

Directions

  1. Peel the beet and slice it very thin with a mandolin, then cut slices into sticks. Set aside.
  2. Cut the herring into small pieces.
  3. Slice the apple (unpeeled) and then cut the slices into small sticks.
  4. Make a vinaigrette mixing the olive oil, vinegar and mustard, salt and pepper to taste.
  5. In a spoon, place some beet sticks, herring pieces and apple sticks.
  6. Add a little mustard vinaigrette.
  7. Keep refrigerated until serving.
  8. It may be prepared in advance, but do not assemble them too long in advance, because the beet may stain the herring pink.
