This tortilla strays a little bit from the traditional dish that features potatoes, instead it is studded with feta cheese, beets, and parsley. The combination of the beets and the parsley makes for a vibrantly colored dish. This can be enjoyed as breakfast, brunch, or lunch. If you serve it for breakfast or brunch, try it with a slice of toasted rustic bread. To enjoy at lunch, serve it with a lightly dressed green salad.

Ingredients

  • olive oil
  • 1/2 onion
  • 1 beet (roasted)
  • 1 sprig parsley
  • salt (to taste)
  • pepper (to taste)
  • seasoning
  • garlic
  • 3 eggs
  • 1 piece feta cheese (to taste)
  • dried dill

Directions

  1. Preheat oven to 190 degrees Celsius.
  2. In a non-stick frying pan, heat a little bit of olive oil. Add the onion, and brown a little on low heat.
  3. Add the sliced, ​​roasted beets (just wrap them in aluminum foil, without peeling, and bake for about an 1 1/2 hours at 200 C. Peel after cooling).
  4. Add the chopped parsley, and season with salt, pepper, and the garlic and herb seasoning. Set aside.
  5. In a bowl, whisk the eggs with a fork, and spread them over the beets.
  6. Crumble the feta cheese on top, and sprinkle with dill.
  7. Cook on low heat until bubbling.
  8. Place the skillet in the oven until the eggs finish cooking.
  9. Do the toothpick test in the center of the tortilla.
  10. Serve with green salad.

I love this mousse! It’s so easy and the raspberry flavor is well infused. I serve this dessert with a single berry on top nestled against a sprig of mint and another raspberry sitting in the bowl of the spoon used to eat it. My favorite place to serve this is at bridal and baby showers or whenever all my friends come together for other women’s events.
