Description

This tortilla strays a little bit from the traditional dish that features potatoes, instead it is studded with feta cheese, beets, and parsley. The combination of the beets and the parsley makes for a vibrantly colored dish. This can be enjoyed as breakfast, brunch, or lunch. If you serve it for breakfast or brunch, try it with a slice of toasted rustic bread. To enjoy at lunch, serve it with a lightly dressed green salad.

Ingredients

  • olive oil
  • 1/2 onions
  • 1 beets (roasted)
  • 1 sprig parsley
  • salt (to taste)
  • pepper (to taste)
  • seasoning
  • garlic
  • 3 eggs
  • 1 piece feta cheese (to taste)
  • dried dill

Directions

  1. 1Preheat oven to 190 degrees Celsius.
  2. 2In a non-stick frying pan, heat a little bit of olive oil. Add the onion, and brown a little on low heat.
  3. 3Add the sliced, ​​roasted beets (just wrap them in aluminum foil, without peeling, and bake for about an 1 1/2 hours at 200 C. Peel after cooling).
  4. 4Add the chopped parsley, and season with salt, pepper, and the garlic and herb seasoning. Set aside.
  5. 5In a bowl, whisk the eggs with a fork, and spread them over the beets.
  6. 6Crumble the feta cheese on top, and sprinkle with dill.
