Description

Rich in flavor, this Beet and Black Basil Pesto also features a unique rich color. Owing to the beets and black basil, which is a deep purple color, this pesto sauce has a unique magenta color that is quite fun. Seasoned with herbs and spices and containing plenty of parmesan, this Beet and Black Basil Pesto is a must try on a bed of your favorite variety of pasta. Serve with freshly grated parmesan and ground pepper.

Ingredients

  • 2 servings
  • 160 grams beets
  • pasta (as needed)
  • 3 tablespoons olive oil
  • basil (black, as needed)
  • 80 milliliters water
  • salt
  • ground black pepper
  • nutmeg
  • parmesan cheese (as needed)

Directions

  1. 1Boil the beets in water. As soon as they are cooked, remove the beets, and use the hot water to cook the pasta al dente.
  2. 2Place the cooked beet, olive oil, and 2 basil leaves in a blender, and churn until you get a very velvety cream; if necessary add some of the pasta water to make it more liquid.
  3. 3Season with salt, pepper, nutmeg, and a little of grated Parmesan, stir everything well, and add to the cooked pasta.
  4. 4Garnish with a few more basil leaves, and a little more Parmesan.
