Creamy and full of deep red color, this Beet Risotto with Coconut Milk makes a healthy dinner option for the family and the color reminds us to remember what we love. Ingredients

  • 2 beets (cooked)
  • 1 orange juice
  • 1 deciliter olive oil
  • 1 onion (chopped)
  • 2 garlic cloves (chopped)
  • 300 grams risotto rice
  • 1 deciliter white wine
  • 9 deciliters vegetable stock (or water)
  • 20 grams butter
  • 10 grams grated parmesan cheese
  • salt (to taste)
  • coconut milk (to taste)

Directions

  1. Mash the beets with orange juice, set aside.
  2. In a pan with olive oil, saute the onion and garlic.
  3. Add the rice, stir, and then cool down with the white wine. Slowly add the vegetable broth, without stirring, but rather, simply swirling in the pan constantly.
  4. After the rice is cooked and creamy, remove from heat, and gradually add the beet puree, butter, and grated cheese.
  5. Mix all the ingredients gently.
  6. Serve the rice with a little coconut milk.

The color of this risotto is amazing. And it tastes as good as it looks. If you have never used beets before, be warned they stain your hands and countertops if you are not careful. I sometimes wear gloves to peel them and use a glass bowl. The coconut milk on top gives this dish a nice extra layer of flavor that I really enjoyed.
