Beef and Vegetable Stir-Fry

  • 1 cup jasmine rice
  • 3 tablespoons vegetable oil
  • 8 ounces beef strips (for stir-fry)
  • 1 onion (sliced)
  • 1 garlic clove (finely chopped)
  • 11 ounces cut beans (frozen French-, thawed)
  • 3 carrots (cut into thin strips)
  • 4 ounces bamboo shoots (sliced, drained)
  • 2 tablespoons soy sauce
  • 1 tablespoon tomato ketchup
  • 1 teaspoon cornstarch
  • 1/2 teaspoon chili paste (sambal oelek, ground)
  • 1/2 cup cashew nuts (toasted)
  • chopped cilantro (for garnish)

Directions

  1. Cook the rice according to the package directions.
  2. Heat the oil in a large skillet or wok on medium-high heat. Add the beef and stir fry for 2 mins. Remove from the skillet. Add the onion, garlic, beans, carrots and bamboo shoots and stir fry for 4 mins.
  3. Mix the soy sauce, ketchup, cornstarch, sambal oelek and 1/2 cup water. Add to the skillet and cook for 1 min or until thickened. Add the beef and cashews and stir fry until heated through. Serve over the rice. Garnish with cilantro.
