Description

With its tubelike structure, squid makes for a great vehicle vibrant and flavorful fillings. In this recipe, the squid is stuffed with a mixture of beef and spinach for a delicious and filling dinner. The stuffed squid rolls are served with a smooth and delicate sauce made from onions, leeks, and tomatoes. This is an impressive and fairly simple meal, making it a great choice for a dinner party.

Ingredients

  • 100 grams spinach
  • 250 grams ground beef
  • bread crumbs
  • 1 eggs
  • heavy cream (splash)
  • ground black pepper
  • 8 squid (small, bodies separated from tentacles)
  • 1 leeks (chopped)
  • 1 onions (chopped)
  • 1 garlic cloves (diced)
  • 1 bottle tomato sauce
  • 8 ounces water
  • 1 vegetable bouillon cube
  • salt

Directions

  1. Preheat the oven to 180 degrees Celsius.
  2. Boil the spinach in salted boiling water.
  3. Drain and mix in a bowl with the ground beef, bread crumbs, egg, cream, and pepper.
  4. Fill the squid bodies with this mixture.
  5. Place on a baking tray and bake for 45 minutes.
  6. For the sauce, saute together the leek, onion, and garlic.
  7. Once softened, add the tomato sauce.
  8. Dissolve 1/2 of the vegetable bouillon cube in a glass of water and add this to the vegetables once they are all warmed through. Salt to taste.
  9. Simmer 5 minutes then blend.
  10. Serve the squid with the sauce drizzled on top.
