Ingredients

  • 2 tablespoons sunflower oil
  • 400 grams minced beef
  • 1 onion (medium, diced)
  • 1 teaspoon sweet paprika
  • 1/2 teaspoon hot chilli powder
  • 400 grams kidney beans (drained and rinsed)
  • 400 grams baked beans
  • 1 tablespoon tomato purée
  • 250 grams chilli (flavoured tortilla chips)
  • 100 grams gouda (grated)
  • crème fraîche (to serve)

Directions

  1. Preheat the oven to 400°F. Heat the oil in a large frying pan, add the beef and fry over a high heat for 2-3 mins, stirring. Mix in the onion and continue to cook for 2-3 mins. Mix in the paprika and chili powder, season with salt.
  2. Mix the kidney beans, baked beans, and tomato paste into the frying pan and sauté for 2-3 mins.
  3. Arrange the tortilla chips in an oven-proof tray. Spoon over the beef mixture then sprinkle with cheese. Bake for 10-15 mins until golden and bubbling. Serve with sour cream.
