Needed more acid. Put a little apple cider vinegar in and it was perfect.

This is amazing! The only thing I changed was "Tuscan Herb" Olive oil I picked up at the Bodacious Olive and I always have these veggies on hand. Easily can cut in half, yet I could eat this all week.
