Ingredients

  • 4 flank steaks (large thin)
  • 2 potatoes (sliced)
  • 2 carrots (sliced)
  • 4 strips bacon
  • 1/2 onion (sliced)
  • 1/2 onion (diced)
  • 1 tablespoon mustard
  • 4 tomatoes
  • 1 clove garlic
  • 1 cup chicken broth
  • salt (and pepper)

Directions

  1. Spread out each flank steak and spread with mustard. Place a strip of bacon and slices of potato, carrot and onion down the center of each steak lengthwise. Sprinkle with salt and pepper.
  2. Roll up each steak and secure with two toothpicks. Cut each roll in half.
  3. Fry the rolls in a little oil in a pan until the meat is cooked on the outside, approximately 2 minutes on each side. Lower the heat.
  4. Blend the tomatoes, broth, diced onion, garlic, salt and pepper in the blender. Add to the pan and cook 20 minutes until the flavors blend.

This is a perfect way to cook flank steak and include veggies and flavor at the same time. The addition of the tomatoes, broth, onion and garlic at the end of the cooking process really helps the flavors soak into the steak. The rolls come out so tender and juicy.
