Ingredients

  • 2 tablespoons vegetable oil
  • 1 tablespoon cornflour
  • 1 pinch salt (and pepper)
  • 800 grams stewing beef (braising/, cut into large chunks)
  • 1 brown onion (large, peeled and chopped)
  • 5 cloves garlic (peeled)
  • 2 ginger (x thumb sized pieces of, peeled and finely chopped)
  • 1 teaspoon turmeric
  • 2 lemongrass stalks (outer leaves removed and softer inside bashed a couple of times with a rolling pin, you can replace this with 2 tsp of lemongrass paste)
  • 2 red chillies (chopped, variety and amount depends on how hot you like your rendang)
  • 1 teaspoon tamarind paste (usually gluten free, but check if required)
  • 1 tablespoon ground coriander
  • 1 teaspoon ground black pepper (freshly)
  • 1/2 teaspoon cinnamon
  • 2 kaffir lime leaves (fresh or freeze dried)
  • 3 tablespoons muscovado sugar (dark brown)
  • 1/2 teaspoon salt
  • 2 cans full fat coconut milk
  • white rice
  • coriander (Chopped)
  • broccoli (Green veg such as, or spinach)

Pretty good. I cut the sugar as well.

Too sweet, reduce sugar to 2/3, maybe just over half, next time and increase chilli, used only 1.5 chillis as concerned would be too hot, next time at least 2. Cut beef into larger pieces as broke up easily and cook for less time so more sauce, did 2 hours 10 uncovered this time. Overall nice flavour and not difficult. Would not serve 4, 3 max. Do again.

Absolutely delicious! If you don't want to wait 4,5h, pressure cooker works the treat, add cornflower later
