  • 3 cups shredded cheese (Mexican-blend)
  • 1 batch red enchilada sauce (homemade, or 1 can store-bought enchilada sauce)
  • chopped fresh cilantro
  • green onions
  • 2 tablespoons vegetable oil

  • 4 tablespoons chili powder (use less if you are afraid of it being too spicy)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon cumin
  • 1/4 teaspoon oregano
  • 1/8 teaspoon cayenne pepper
  • 2 cups vegetable stock (or chicken)
