  • 2 tablespoons oil
  • 1 kilogram minced beef
  • 1 onion (medium, finely diced)
  • 3 cloves garlic (finely chopped)
  • 3 tablespoons tomato paste
  • 400 milliliters tomato juice
  • 425 milliliters chopped tomatoes
  • 425 milliliters kidney beans (tin of, drained and rinsed)
  • 425 milliliters baked beans (tin of)
  • 425 milliliters corn (tin of, drained)
  • 6 tablespoons sour cream (lactose free)
  • 8 red chillies (finely sliced)
  • rosemary (chopped, for garnish)

    Directions

    1. Heat oil in a nonstick frying pan and brown the ground beef. Season with salt and pepper then add the onion and garlic and cook for 2 mins. Stir in the tomato paste and cook for 2 mins. Add the tomato juice and chopped tomatoes, stir and simmer for 2 more mins. Add the kidney beans, baked beans and corn, season to taste with salt and pepper and simmer for a few more mins until heated through. Serve with sour cream and garnish with the sliced chili peppers and chopped rosemary.
