Think of this dish as a spin on vitello tonatto—a popular Italian main course that combines veal cutlets with a tuna-caper sauce. In this starter course update, paper-thin slices of raw beef tenderloin are topped with a quick and easy sauce made from canned tuna, eggs, cream cheese, milk, and simple seasonings, all blended until creamy in a blender or food processor. Be sure to buy the best-quality beef available, from a trusted source.

Ingredients

  • 5 ounces canned tuna
  • 1 egg yolk (hard-boiled)
  • 1 tablespoon light cream cheese
  • 2 tablespoons low fat yogurt
  • 2 tablespoons skim milk
  • garlic powder
  • ground black pepper
  • sea salt
  • 200 grams beef tenderloin (carpaccio of)
  • dill (dried)

Directions

  1. Blend together the tuna, egg yolk, cheese, yogurt, milk, and a pinch each of garlic powder, black pepper, and salt until smooth and creamy.
  2. Place the beef carpaccio on a serving plate and spread with tuna sauce. Garnish with dried dill.

This recipe was used low-fat ingredients, which is very important to my family and me. The only thing I changed was to add a little onion powder along the garlic powder, pepper and salt.
