Description

- 1 cup pinto beans (cooked)
- 1 Tbsp. hot sauce
- 1/4 cup frozen corn kernels
- 3 Tbsp. onion (diced)
- 1 tomato (diced)
- 3 Tbsp. coriander (minced)
- 2 sandwich buns
- 100 grams mozzarella cheese (grated)
- 1/2 avocado

Directions
- Grease a skillet with cooking spray and heat on medium heat. Add the onions and stir until they are transparent.
- Add the tomato, hot sauce, and corn kernels. Cook while stirring for 2 minutes.
- Add the pinto beans and cook for 2 more minutes. Add the coriander and turn off the stove.
- Cut open the sandwich buns, spread the beans, add an avocado slice on top and mozzarella cheese. Close the sandwich.
- Grill the sandwich until the cheese melts, let it cool off completely, and serve.
