Ingredients

  • flank steak (grilled and cut into pieces)
  • beans (Cooked, warmed)
  • corn tortillas
  • cheese (Melting, such as Oaxaca, may substitute mozzarella or cheddar)
  • 2 tomatoes (diced)
  • 1/4 onions (diced)
  • 1/4 cup cilantro (minced)
  • 2 serrano chiles (diced, optional, may substitute jalapeno)
  • 1 lime
  • salt and ground black pepper

Directions

  1. Prepare the salsa by combining the tomato, onion, cilantro, chiles, lime juice, salt, and pepper. Set aside.
  2. Place a little cheese inside each tortilla. Fold in half and place on a hot skillet until slightly golden and the cheese is melted.
  3. Place the beans in a serving bowl and top with the pieces of steak. Serve along with the quesadillas and the salsa.
