Ingredients

flank steak (grilled and cut into pieces)
beans (Cooked, warmed)
corn tortillas
cheese (Melting, such as Oaxaca, may substitute mozzarella or cheddar)
2 tomatoes (diced)
1/4 onions (diced)
1/4 cup cilantro (minced)
2 serrano chiles (diced, optional, may substitute jalapeno)
1 lime
salt and ground black pepper

Directions

1Prepare the salsa by combining the tomato, onion, cilantro, chiles, lime juice, salt, and pepper. Set aside.
2Place a little cheese inside each tortilla. Fold in half and place on a hot skillet until slightly golden and the cheese is melted.
3Place the beans in a serving bowl and top with the pieces of steak. Serve along with the quesadillas and the salsa.
