Ingredients

  • 3/4 cup nopal (cooked)
  • 1 cup black beans (cooked and drained)
  • 5 green tomatoes (sliced)
  • 10 cherry tomatoes (sliced)
  • 1/3 cup hot sauce
  • 3 tablespoons onion (chopped)
  • 2/3 cup cheese (Panela, or farmer’s cheese)
  • salt
  • ground black pepper
  • 1 avocado

Directions

  1. In a salad bowl mix nopal, beans, hot sauce, tomatoes and cherry tomatoes, onions, cheese, salt, and black pepper. Carefully mix all of the ingredients.
  2. Cut the avocado into thin slices and place it on top of the salad as decoration.

This is more of a side dish than a salad, but it is still delicious. I used Italian dressing instead of the hot sauce over it. You could probably use a little of both. Make sure the black beans are well drained and rinsed off. If you don't rinse them, they will turn the dish a purple color.
