Ingredients

1 tablespoon olive oil
1/2 cup onions (diced)
2 tomatoes (diced)
1 cup brown rice (cooked)
1 cup beans (cooked)
1/2 tablespoon chile powder
1/2 teaspoon oregano (ground)
1 tablespoon cilantro (minced)
1/3 cup tomato sauce
salt and ground black pepper
1 cup lettuce (washed and shredded)
1/2 cup cheddar cheese (shredded)
tortilla chips (or tostadas broken into pieces)
prepared salsa
lime juice

Directions

1Saute the onion in the olive oil until it begins to brown, add one tomato, rice, and beans. Season with the chile powder and oregano. Cook for 3 minutes, to heat through. Remove from heat.
2Mix the other tomato, cilantro, tomato sauce, salt, and pepper together in a separate bowl.
3Place the lettuce into a salad bowl along with the rice and bean mixture. Stir in the tomato mixture and serve topped with cheese, tortilla chips, salsa, and lime juice.
