Description

These little bean and chicken taquitos are perfect for snacking or pair them with a little bit of rice or some vegetables for a meal. The chicken is seasoned with a mixture of cumin and cayenne for a ton of flavor and a little spice while a salad of beans, avocado, tomato, onion, cilantro, and lime acts as a base full of bold and vibrant flavors. Corn tortillas have a nice earthy flavor that works well with all the flavors of the chicken and the salad. Grilled onions and jalapenos add an extra bit of spice and flavor.

Ingredients

  • 1 cup beans (cooked)
  • 1 avocado (diced)
  • 2 tablespoons tomatoes (diced)
  • 1 tablespoon onions (diced)
  • 1 tablespoon cilantro (minced)
  • 1 lime (medium-sized)
  • salt and ground black pepper
  • 2 boneless skinless chicken breasts (medium)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili flakes (may substitute cayenne)
  • 1 tablespoon olive oil
  • salt and ground black pepper
  • 1 onions (sliced)
  • 1 jalapeno chilies (sliced)
  • 4 corn tortillas

Directions

  1. 1Mix together the beans, avocado, tomato, onion, cilantro, and lime juice. Salt and pepper as needed. Set aside.
  2. 2Mix the oil, cumin, cayenne, salt and pepper together and pour over the chicken. Coat well and let marinate 5 minutes in the refrigerator.
  3. 3Grill the chicken until cooked through. Remove, let cool slightly, and cut into strips.
  4. 4Grill the onions and jalapeno until the onion caramelizes.
  5. 5Heat the tortillas and fill with the bean salad, grilled vegetables, and the chicken.
