Ingredients

  • 8 flour tortillas (6 inch)
  • 1 cup chopped onion
  • 2 tablespoons water
  • 1 can nonfat refried beans (16 ounce)
  • 1 can green chili pepper (4 ounce drained)
  • hot pepper sauce (several dashes bottled)
  • 1 cup cheese lowfat (monterey jack, shredded)
  • 3 cups lettuce (shredded)
  • 1 cup salsa (bottled)

Directions

  1. Wrap tortillas in foil. Heat in 300 degree oven about 10 minutes to soften.
  2. Meanwhile cook the onion in the water in a medium saucepan until tender.
  3. Donot drain. Stir in the refried beans, diced green chilli peppers, and hot pepper sauce. Cook and stir until heated through. Spoon about 1/3rd cup ofthe bean mixture onto each tortilla just below the center. For each burritosprinkle about 3 Tbl of the cheese atop the bean mixture; roll up tortilla.
  4. Place on a foil-lined baking sheet. Bake, Loosely covered, in a 350 degreeoven about 10 minutes or until heated through. To serve, place 3/4 cup of the shredded lettuce on each plate and top with 2 burritos. Serve with thesalsa.
