This bean and pasta soup is filling and hearty, perfect for a weeknight dinner. It only needs 9 ingredients and 30 minutes to bring together. The beans give the soup a nice dose of protein, while tomatoes and cilantro provide a ton of bold flavor. Garlic and onions add a bit of aromatic flair, while a sprinkling of crumbled cortija cheese adds a bit of creamy saltiness that complements the flavors of the soup perfectly.

Ingredients

  • 2 tomatoes (ripe)
  • 1 piece onions
  • 1 clove garlic
  • 2 cups beans (cooked, with a little of their cooking broth)
  • 5 sprigs cilantro
  • 2 cups water
  • 1 teaspoon chicken bouillon (powder)
  • 2 cups pasta (cooked)
  • cotija cheese (crumbled, may substitute feta cheese)

Directions

  1. 1Toast the tomatoes, onion, and garlic on a hot skillet. Liquify in the blender and add the beans with a little water and the cilantro. Blend well.
  2. 2Pour the bean puree into a saucepan, adding the water and chicken bouillon. Let simmer for 10 minutes
  3. 3Stir in the pasta, cook for 1 or 2 minutes and serve, sprinkled with cheese.
