- pasta
- 200 grams penne
- 2/3 cup beans
- 2 tomatoes
- 1/2 green pepper
- 1/4 cup onion
- 1/2 cup cheese
- 1/2 avocado
- 1 Tbsp. fresh cilantro
- queso fresco
- 1 lemon
- 1 Tbsp. salsa
- 1 Tbsp. olive oil

Directions
- Cook the pasta al dente according to the directions on the package. Remove from heat, drain, and rinse slightly with cold water.
- Place the beans, tomatoes, green pepper, onion, panela cheese, and cilantro in a salad bowl with the pasta.
- In a separate bowl, mix the lemon juice, green salsa, and olive oil. Pour the dressing over the salad, mixing well before adding the avocado and sprinkling with queso fresco.
