Hefty and meat-heavy, this Bavarian "salad" — more of a meat and cheese assemblage, really — consists of a variety of sausages, cheeses, pickles and onions, all dressed with a simple mustard and olive oil vinaigrette. Serve it on a chilly day with a wedge of piping-hot bread. Or, lighten things up by serving a bright veggie dish, such as a crunchy radish salad, alongside.

  • sausage (Lyoner meat)
  • cheese (your choice)
  • white onion
  • pickles
  • mustard
  • extra-virgin olive oil
  • salt

Directions

  1. Cut the raw Lyoner sausage into slices or strips.
  2. Cut the cheese and the pickles into strips and the onion into thin rounds.
  3. Prepare the dressing by combining mustard, extra virgin olive oil and salt.
  4. Place the sausage on a plate with the cheese, the onion, and the pickles. Add the dressing and serve with warm bread.

Grill the sausage first to get a nice smoky texture, then let it cool down completely before you slice it up or the salad will start wilting right away. This is a great dish to make again.
