It turned out really good! I recommend to take it out at 50 minutes or less depending on how crisp you would like the top and I added some vanilla paste in addition to the vanilla extract to give it more flavor. Also melt some semisweet chocolate in a double boiler, drizzle on top, and voilà perfect basque burnt cheesecake!

I have made this about 3-4 times, each time experimenting with the baking time as I found the recommended baking time of 60-65 min makes the cake too firm for my liking.
My preferred baking process for a softer & fluffier texture is 30-40 min of baking at 200C & 5-7 min on broil at 180C for that burnt look (each oven is different so do check at 5th min to make sure it’s not too burnt).
Overall, this is an easy recipe to follow with lovely results. I used 140g instead of recommended 150g sugar & the taste was perfect for me..
