Ingredients

  • 1 2/3 cups milk
  • 1/2 cup cream
  • 1/2 vanilla pods (split lengthwise and seeds scraped out)
  • 6 large egg yolks
  • 1/3 cup sugar

Directions

  1. Heat the milk, cream, vanilla pod and seeds in a saucepan over medium heat until just simmering. Remove from heat and cool 10 mins, to infuse. Whisk together egg yolks and sugar in a bowl until pale and creamy, then gradually whisk into warm milk mixture. Return to the pan and stir over low heat 8-10 mins, until mixture coats the back of a wooden spoon. Strain through a fine sieve and discard the vanilla bean. Serve warm or refrigerate, covered, and serve cold.
