    Directions

    1. Preheat oven to 350 degrees F. Place in a roasting pan and roast for 1 hour (about 15 minutes per pound) until internal temperature on a thermometer reads 145 degrees F. Remove roast from oven; let rest about 10 minutes. If your butcher has tied the roast with string, remove string before slicing.
    2. Serves 8-10, with leftovers.
