This turned out really great! I’m not one to 100% follow directions but I tend to estimate amounts. This time I followed this pretty closely and it was soooooo simple and fast. I’m a single mom and work full time. This is a perfect recipe to make on those busy nights. I’m going to make it again but use shrimp instead of chicken.

Why is no one talking about how AMAZING this is as a cold noodle salad! So addictive and spicy...Vietnamese flavors spicy, smoky, sweet, with a nice pallet cleansing hit of lime. Yum yum yum yum YUM!

I made this tonight as the recipe is written, it was good, didn't use parsley, but it does need the green, the other thing I would change would be to add more chicken, and use fat free greek yogourt in stead of mayo,, even though I used fat reduced
