Banana and Coconut Muffins


Muffins are a wonderful way to start the day. They provide a flavorful treat to the morning. These Banana and Coconut Muffins are the perfect blend of sweet and decadence. They take about an hour to prepare and are 240 calories. Bring a batch to the office and be the star for the day. Who doesn't love bananas and coconut? This is a winning recipe everyone will enjoy.   • 2 1/2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 4 bananas (ripe, pureed)
  • 170 grams butter (melted)
  • 1 1/3 cups sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup shredded coconut


  1. Preheat the oven to 180 Celsius.
  2. Sift together the flour and baking powder and place into a large mixing bowl along with the salt and cup of shredded coconut. Set aside.
  3. In a separate bowl mix the butter, bananas, sugar, eggs, and vanilla. Add to the dry ingredients and mix slightly to incorporate.
  4. Pour into a muffin tin and sprinkle with the remaining coconut.
  5. Bake for 20-25 minutes, until an inserted toothpick comes out clean. Remove from oven, let cool 10 minutes, and remove from the tin. Let cool completely before serving.
