  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/4 cup corn starch
  • 1 pinch salt
  • 2 bananas
  • 1 teaspoon vanilla
  • 1/8 teaspoon cream of tartar
  • vanilla wafers

    Directions

    1. Stir together all dry ingredients. Add 3 beaten egg yolks. Stir in 1can (12oz) evaporated milk (or use half n half or cream) / 1.5 cup milk / 2tbsp butter. Cook in double boiler or over low heat stirring constantly until thickens. Cool.and add vanilla
    2. Beat egg whites until stiff not dry / add scant 1/4 cup white sugar & 1/8 tsp cream of tarter and beat until blended. Slice about 4 bananas and layer with vanilla wafers in baking dish. Spoon custard over top and repeat layers. Tamp dish to settle pudding into crevices. Spread merengue over top. Bake 350 just until golden.
