Banana Cupcakes with Maple Icing

Ingredients

  • 1/4 pound cream cheese
  • 1/4 cup maple syrup (+ 2 tbsp)
  • 1 teaspoon lemon zest
  • 2 1/4 cups self rising flour
  • 1/3 cup all purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 cup brown sugar
  • 4 1/4 ounces banana (overripe, mashed)
  • 2 eggs (lightly whisked)
  • 1 cup buttermilk
  • 1/3 cup vegetable oil
  • 1/3 cup walnuts (chopped)

Directions

  1. For the maple icing, beat cream cheese, 2 tbsp maple syrup and lemon zest in a small bowl until light and fluffy. Set aside.
  2. Preheat oven to 400°F. Grease a 12-cup muffin pan. Sift dry ingredients into a large bowl. Add remaining maple syrup and banana. Add eggs, buttermilk and oil and mix until just combined. Transfer to prepared pan. Bake for 20 mins, or until a skewer inserted in the center comes out clean. Let cool in pan for 5 mins then transfer to a wire rack to cool completely.
  3. Frost cupcakes with maple icing. Sprinkle with walnuts. Serve.
