Ingredients

- 1 2/3 cups flour
- 1/3 cup sugar
- 1 ounce shredded coconut
- 1 2/3 cups milk
- 2 large egg yolks
- 3 cups vegetable oil (for deep frying)
- 4 bananas (halved lengthwise, cut into 1 inch pieces)
- powdered sugar (for dusting)
- vanilla ice cream (to serve)
- lime wedges (to serve)
Directions
- For the batter, combine flour, sugar and coconut. Make a well in center and gradually whisk in combined milk and egg yolks.
- Heat oil in a large saucepan on medium, until a drop of batter sizzles immediately. Coat banana pieces in batter, allowing excess to drip off. Add to oil in batches and cook 3-5 mins, turning, until golden. Drain on paper towels. Dust with powdered sugar and serve hot with ice cream and lime wedges.
