This next-level banana bread is a great way to use up spent fruit, though you'll no doubt be buying and mashing bananas for this purpose alone. It gets its rich chocolate flavor from dark cocoa. Bake the batter in mini-loaf pans. After letting them cool, sprinkle the bread with powdered sugar, slice it and enjoy.

Ingredients

  • 150 grams butter (creamed)
  • 180 grams sugar
  • 2 eggs
  • 220 grams flour
  • 100 grams dark chocolate (powdered)
  • 10 grams baking powder
  • 180 milliliters milk
  • salt
  • 2 bananas (ripe, mashed)

Directions

  1. Preheat the oven to 190C.
  2. Cream the butter with the sugar.
  3. Add the eggs.
  4. Stir together the flour, the baking powder, the chocolate, and salt and add it to the butter mixture, alternating with the milk.
  5. Add the mashed bananas and stir well to combine.
  6. Place the batter in mini loaf pans and bake for 35 minutes.
  7. Cool completely and sprinkle with powdered sugar.

The fruit and chocolate compliment each other, but it works best if the banana puree has bits left in it so you can appreciate the flavor separately from the chocolate. I also just folded in the banana mixture instead of mixing it in so that it is even more evident.
