Perfect complements to one another, lemon and rosemary infuse this cake with flavor. Best of all, it's in the oven within no more than 20 minutes, meaning it's a savory-sweet dessert that you could realistically bake any night of the week. A word of advice: serve it with lemon curd or, perhaps, a scoop of olive oil gelato.

Ingredients

  • 2 bananas (ripe)
  • 30 milliliters vin santo
  • 230 grams pastry flour
  • 180 grams sugar
  • 3 eggs
  • 70 grams butter (at room temperature)
  • 130 grams milk
  • 50 grams chocolate chips
  • salt
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • powdered sugar
  • ground cinnamon

Directions

  1. Preheat the oven to 180C.
  2. Mash the bananas with a fork and place them in a bowl with the Vin Santo.
  3. Beat the sugar in a bowl with the eggs, add the butter, milk, flour, a pinch of salt, baking powder and vanilla extract.
  4. Add the bananas with the Vin Santo and the chocolate chips.
  5. Butter and flour a cake pan and bake the cake for approximately 45 minutes or until a toothpick inserted in the center comes out clean.
  6. Remove the cake from the oven, cool completely and sprinkle with powdered sugar and cinnamon before serving.

This banana cake was a very dense and moist cake; didn't take much to fill you up. The mixture of chocolate and banana made it a more of a desirable treat. Neither one overwhelmed the other so you were able to taste both banana and chocolate. This 5 star recipe is on my baking list permanently.
