Description

Perfect complements to one another, lemon and rosemary infuse this cake with flavor. Best of all, it's in the oven within no more than 20 minutes, meaning it's a savory-sweet dessert that you could realistically bake any night of the week. A word of advice: serve it with lemon curd or, perhaps, a scoop of olive oil gelato.

Ingredients

2 bananas (ripe)
30 milliliters vin santo
230 grams pastry flour
180 grams sugar
3 eggs
70 grams butter (at room temperature)
130 grams milk
50 grams chocolate chips
salt
2 teaspoons baking powder
1 teaspoon vanilla extract
powdered sugar
ground cinnamon

Directions

1Preheat the oven to 180C.
2Mash the bananas with a fork and place them in a bowl with the Vin Santo.
3Beat the sugar in a bowl with the eggs, add the butter, milk, flour, a pinch of salt, baking powder and vanilla extract.
4Add the bananas with the Vin Santo and the chocolate chips.
5Butter and flour a cake pan and bake the cake for approximately 45 minutes or until a toothpick inserted in the center comes out clean.
6Remove the cake from the oven, cool completely and sprinkle with powdered sugar and cinnamon before serving.
