  • 2 tablespoons olive oil
  • 1 large egg (I used a duck egg)
  • 200 grams spelt flour (wholemeal, I used sprouted spelt)
  • 2 baking powder (scant tsp)
  • 1/2 teaspoon cinnamon
  • sea salt (or pinch of fine rock)
  • 50 grams walnuts (roughly chopped)
  • peanut butter (to serve, I used organic fair-trade unsalted smooth peanut butter from Equal Exchange.)
  • 1 can coconut milk (I used organic fair-trade MA's)
  • 80 milliliters hot water
  • 1 teaspoon cocoa powder (pure, I used organic fairly traded Equal Exchange)
  • 25 grams dark chocolate (chopped, I used fair-trade Divine)
  • 1 tablespoon maple syrup (or sweetener of choice - depending on taste)
