Description

Banana bread is a not-so-secret weapon when it comes to using up spent fruit. This simple iteration uses self-rising flour, vanilla extract and plenty of brown sugar, resulting in a nuanced loaf that can be enjoyed for breakfast or in the afternoon with tea. Go ahead and customize the batter to your taste, adding nuts, dates, cinnamon, chocolate chips or other spices you prefer. Serve it with butter and a drizzle of honey for even tastier results.

Ingredients

3 bananas (ripe, mashed with a fork)
100 grams butter
1 cup brown sugar
2 eggs
2 teaspoons vanilla extract
3 tablespoons milk
2 cups self rising flour (or all purpose flour sifted with 1 tsp. baking powder)

Directions

1Preheat the oven to 180C.
2Melt the butter and place it in a bowl.
3Add the sugar and the eggs and beat with an electric mixer.
4When the mixture is foamy, add the bananas.
5Heat the milk without bringing it to a boil and add it to the batter.
6Add the vanilla extract and the self-rising flour.
7Place the batter in a loaf pan and bake for approximately 1 hour. Cover the banana bread with a sheet of aluminum foil after 45 minutes and bake until a toothpick inserted in the center comes out clean.
8Remove the banana bread from the oven and cool on a wire rack. It is possible to add nuts, dates, cinnamon, chocolate chips, or other spices to the batter.
