  • 1/4 purple onion (cut into thin strips about 1 1/2 inches long)
  • 8 mushrooms (sliced, I used brown Cremini mushrooms, also called "baby Bella")
  • 2 tablespoons extra-virgin olive oil (plus more for sauteeing veggies)
  • 2 teaspoons balsamic vinegar
  • 1/4 teaspoon garlic puree (or crushed fresh garlic)

This was a good recipe. I added a touch of salt at the end and it was perfect. I think next time I’ll add thyme to the dressing to give it a more complex flavor.
Added Seitan, sundried tomatoes, shitaake, Cremini mushrooms. Protein-packed, vitamin rich meal! I call this a go-to salad!
