Thanks, a great recipe that we followed apart for using Molasses Sugar not White and at my wives suggestion chili powder was added to taste at the end of the cooking, This addition I can highly recommend. When we make it next time we will start off with one and a half cups of water and add more if required as ours was quite moist and took a lot of simmering to reduce it. We also used an electric hand held blender to aid the pulping up of the figs towards the end of the cooking, We used Brown Turkey Figs grown on a tree that must be 80 years old that is on the south easterly facing wall of our bungalow. We live in central England at 500 feet above sea level and almost every year we have a surfeit of Figs and give a lot away to our friends and neighbors.
