My review is mixed. The balsamic glazed mushroom and onion mixture was fantastic, especially with the roasted garlic. However, the fact that the chicken is cooked separately, just pan-seared and then baked with only salt and pepper, made it so that the chicken did not have any of the flavors of the dish. I’m going to try this recipe one more time, and this time I will not bake the chicken all the way, but finish it in the pan while I am cooking down the balsamic sauce. I also plan to slice the breasts in half lengthwise, so they are thinner and thus have more surface area to absorb some of the sauce flavors. I’ll keep you posted!

I instead baked the chicken in cream of chicken for more sauce, based on some comments lacking sauce. Topped all the chicken with the onions and mushrooms and it came out pretty darn good with a side of broccoli.

We absolutely loved this recipe and will make again! I added a little honey (about 1 tbl) , like some other comments suggested. The little kick of heat from the red pepper flakes really made this dish pop! I served with steamed broccoli and drizzled a little of the balsamic sauce on them too! Fantastic!

Such great flavor and I added provolone to the chicken in the oven to melt on top. Would even be great with some cherry tomatoes warmed up in the sauce!
